Monday night Blinds at Nopa—Take 7 with TH (Nopa SF): A kaleidoscope of all the apple experiences in my life. Drinking fresh apple cider at my middle-school teacher's farm. Eating an apple, core and all, while hiking. Crab apples as a child, green apples, yellow apples, bruised and browned apples, rotting apples. Wheelbarrows full of apples in varying states of decay at D Acres farm in New Hampshire. Apple vinegar and bitter apples. In the mouth it had fairly moderate alcohol for a spirit (40%), a slight touch of residual sugar, and a slight bitterness as well, with a nice tart acidity. I really enjoyed this.

Nectar. Pure and thrilling, very cidery with little heat.
