  12.1% Clear pale lemon / clean, med int. – green apple, lime flesh / bone dry, high acidity, light body, med intensity. As the tart acidity punches you in the face (just like sucking on a lime), it needs food and a spicy scallops ceviche was the way to go I believe. Interesting one, but perhaps more time will smooth the tartness and make it seem slightly more balanced.
