  • Coravin Session #5 - Australian Shiraz: [From Coravin, screwcap]

The appearance is clear and medium ruby in colour. Tears are visible.

The nose is clean. The aromas have a medium intensity and show notes of black fruit (blackberry, bramble), bottle age (roast beef, savoury, vegetal), pungent spice (black pepper), and herbal characteristics (eucalyptus). The wine is developing.

On the palate, the wine is dry with high acidity, high alcohol, and a full body. The high level tannins are suede-like in nature. The flavours have a medium(+) intensity and show notes of black fruit (dried blackberry, cooked black plum, dried blueberry), herbal characteristics (eucalyptus), pungent spice (black pepper), mineral (saline), and oak (subtle cardamom pods, subtle ground cinnamon). The length is long, and features additional notes of floral characters (dried violets) and bottle-age characters (black olives, braised beef, mushroom).

This is a very good quality wine. The flavours have a great balance with the acidity and the alcohol. Warmth from the alcohol shows on the back palate (a wine of higher quality would better mask the alcohol). The suede-like tannins show a good balance with the acidity. The flavours have a great concentration as indicated by the long length of the finish (a wine of higher quality would show more concentration). In its current state, the wine shows complexity with primary, secondary, and tertiary characteristics. The primary fruit shows well and is supported by the secondary and tertiary characteristics. The oak treatment is well-integrated. The tertiary characteristics have a strong umami character over the finish.

The wine drinks well now, but is suitable for further ageing. The fruit shows great concentration and the tannin and acid structure should continue to support the wine as tertiary notes continue to develop.

  • This is great value for money. Delicious sun on the palate - but not too much. Instead of the old cassis, I sense an almost Sangiovese/cherry feel to it. Discrete yet present acidity. Make sure to taste it chilled - like 40 minutes in the fridge, and you will get a much better wine out of it.
