  • I've had a few vintages of Savary's wine but it's only in 2002 that I've found them approaching profundity. This was an absolutely classic aged Chablis. Pulsing acidity and stony minerals mixed with honeyed overtones--incredible. This could only be Chablis but blind I would have guessed a much more renowned producer. Tasted waaaay beyond its price point, whatever that was back in 2004. Memorable.

  • This is the first premier cru wine I've had from Savary. I was impressed. I opened the bottle, sniffed, and sipped, not expecting great things but was surprised. Within 20 minutes the wine had blossomed into something I regard as classically (and classily) textbook Chablis. Lean, racy, long; no oak, tingly with acidity; still very young, I'm in no hurry at all to open another bottle. This may not have the complexity and finesse of, say, a Raveneau but it was a fraction of the price. Really, really good wine.

    we don't see much around here, but this is last bottle of an order from PC a few years ago. I opened because of prem-ox fears, but this was fairly fresh. No apparent oak, some chalky notes, light but pure green apple and citrus fruit. This is not a good wine to try to convert a CalChard drinker, but I found quite nice. Lighter styled Chablis, mineral, dry, crisp, refreshing. A little more concentration would put it into excellent camp, but I enjoyed. B+
