Popped and slow ox'd for an hour. Pale ruby color. Gorgeous nose of dried cherry, floral notes, fresh earth, sandalwood, a bit of balsamic, cedar. Reminded me a bit of an aged Nebbiolo on the nose. Similar flavors on the palate with a mix of fresh and dried red fruits with earth and spice. Silky smooth on the palate. Very fine tannins. Medium+ acid. Long finish. Really fantastic bottle of wine.

Really elegant. Floral and earthy aromas. Ripe -but not overly sweet - red fruit with notes of earth, mineral, flowers. Terrific structure and balance. I thought this was nicely integrated but I also think it will benefit from a few more years of cellar time. I had this with a cream-based cod dish and it was outstanding. It would be a winner also with roast chicken. But this is more on the delicate side and not a wine to drink with a steak. Give it a generous (two hour or more) decant.

Nicolas Rossignol's 2011s (Bistro 7 (7 N. 3rd St., Philadelphia)): This exudes class. Perfumed nose, clean focused razor sharp acidity. Austere. Elegant. Terrific fruit and a touch of sweet spice. Elegant from start to finish. Excellent.
