Upon opening, I tasted bitter green pepper (pyrazine) that muted everything else. The next day I tried my venturi to see if the wine would open up. It didn't help mute the green pepper taste which I hate in a wine. After sealing the bottle via a vacuum pump, I let the bottle sit another four days. I was very pleased to find the pyrazine taste gone and a typical dark fruit Syrah present with a smooth finish. I'm thinking this vintage may be best to drink up now especially if you like green pepper in your wine!

Robust and luscious. Lotsa pencil box notes on opening/decanting/pouring. Big, deep fruit.
