The pungent saltiness and yeast and aldehyde of a Manzanilla that's basically bottled en rama, but it's mellow out in a way due to being in bottle for a couple years now. Apple, almond, hay, and a long steely finish. Fairly full-bodied and aged.

Almonds, salty, more bright and delicate than the fino; saline, acidic, and floral with a little aldehyde band-aid. Lovely balance and complexity. Aged 6 years. drink with dishes that would normally accompany light, bright white wines, or with appetizers, or as an aperitif.

Golden color, brilliant clarity. In the aroma, honey dominates, along with a strong yeast component, pear, almonds. Taste is slightly bitter with a heavier body than most Manzanillas, and a sharp pungency which rounds out with air. This is very unique, masterfully balanced, with a nice "punch" to it without losing drinkability.
