James turns 30 years old (Trenchermen, Chicago IL): Nose: Mature and evolved nose with tones of lanolin, wax, caramel apples, bleu cheese, and some bits of figs. There is nice depth to it and it needs some time to open up.
Taste: Medium/full bodied with medium+ acidity with the structure showing through nicely. It well in balance with tones of of lanolin, wax, caramel apples, and some figs.
Overall: This did take some time to fully open up, but it also revealed more pear and fruits as it did. This was a lot of fun and it showed some real class to it.
