Jura study (Chicago, IL): A somewhat indistinct version of this, where it feels like this is sitting in a bit of an awkward phase in that it's missing the freshness but also hasn't developed much of the aged notes either. Interestingly enough, not very reductive.

The age has finally polished off the funk and rustic character and this is now a bright beam of varietal character fruit with a hint of salinity in the background, acidity and minerality present but enhancing the fruit not overwhelming it. I think this wine is at the beginning of its prime drinking years, and was accessible with just about 30 minutes of air. Really enjoyed it.

High acidity dominates the palate directly after opening. In the decanter four hours, and the nose is exceptional. One can smell it from a meter's distance. Herbal, like ginger, kurkuma and lemongrass packed in straw, lots of fruit like pineapple, lemon and apricot. Salty broth, minerals, oxidative; constant changing it's aroma' s. Getting a fuller mouthfeel, and a very balanced acidity during the hours. A chapeau for les Tissots! I hope this style will never reach mainstream.
