Six months after the prior: Five days before a dinner party, we opened this, took small tastes, recorked, and put it back in the cellar. Served at the end of a large dinner party with walnuts, walnut bread, Vacheron and Comte, it was simply superb. Very young at this stage, of course — doubtless it will become fabulous in coming decades. We have a few more, and will open another in five or so.

Very young, despite having been opened several days before. Very Manzanilla on the nose - like inhaling the air at a Mediterranean beach. Palate is rich but with mouthwatering acidity. Lots of things going on - yeasty, grapefruit and granny smith apple fruit, salted almonds. Weightless but with a mouth saturating finish. Almost screams for tapas... or perhaps Rosti with melted Alpine cheese.
Fenugreek, salt caramel, curry spices. Almonds, cooked tree fruit. Very mineral driven Full bodied, long lingering finish. Very young and has a long, long life ahead of it.

We could not resist trying it at this very early stage. Vibrant, bright, with expected bracing acidity. Nutty and savory. Deep, with suggestions of complexity to come. Highly enjoyable in small pours over four nights. Extremely promising.
