Mid salmon colour. High toned, salty nose, over a base of raspberry jam. Very tangy, lively taste, with a high, moderately sherbetty acidity combined with an almost aggressive mousse. The midpalate, though, is all pinot noir - like a light Alsatian or perhaps something from Tasmania, where some of the grapes in this originate. Interesting, at the 'red' end of sparkling rosé, and priced about right. [Composite cork + cage; 12% abv; £17, The Bon Vivant's Companion, Edinburgh].
