This bottle was about seven years old. Pale orange color. Excellent balance. Notes of wild cherries, apricot, and persimmon. Pas dose results in dry but elegant finish - great with frito misto.

Of course because it’s non-dosé I knew it would be very dry. Fortunately there’s enough matière to buffer it somewhat. It never opens up though and the impression is of liquid rock and acid with nary a hint of yeast autolysis in sight. This might work with a very fatty or oily fish or poultry but not so much with the Pompano I paired it with. Or perhaps it will fill out with additional age.
