  • Abierta una botella en formato Magnum este mediodía en una comida de nueve personas, se suscitaron reacciones contradictorias sobre el mismo. Lo cierto es que se trata de un vino especial y que no deja indiferente a nadie. Es un vino blanco aunque resulta imposible dejar de referenciarlo a un jerez o manzanilla aunque sólo sea por su lugar de origen y cepa utilizada y además desde luego por presentar referencias amplias a este tipo de vinos. Además, hay que tener en cuenta que la variedad Palomino Fino es muy poco expresiva, hasta podríamos decir que francamente sosa en el orden olfativo, pero sin embargo transmite muy bien la naturaleza caliza del terreno, lo que representa esencialmente este vino es la esencia de la tierra donde se cría, más las levaduras autóctonas que ayudan en su desarrollo. Entiendo que este vino rezuma la tierra caliza en la que se cría por todas partes, tanto olfativa como gustativamente

    Este vino es el fruto del esfuerzo de un reducido grupo de personas, ( Equipo Navazos) excelentes conocedores del marco de jerez, que han intentado revitalizar una manera de hacer vino blanco - no jerez ni manzanilla- en la forma tradicional de su tierra, en la forma que se utilizaba desde siempre pero reducido consumo casero o local, sin proyección al exterior. En este sentido su labor es admirable y creo que todo lo que implique ampliar horizontes y conocimiento es digno de elogio.

  • Amarillo de capa alta y toques verdosos. Aroma intenso floral y salino con cítricos. Boca bastante glicérica, fresca, floral, salada, notablemente ajerezada cuando la temperatura aumenta y fondo muy mineral, calizo. Mejor esta edición que la del 2012. Un buen vino con un carácter muy especial

  • This is the sixth vintage is this collaboration wine between the Sherry producer Equipo Navazos and Dirk Niepoort of Douro fame. An attempt to create a traditional "white wine version" of Sherry, i.e. making Fino Sherry without fortification. Fermented spontaneously in old (40 yo), 600-liter American oak casks which are filled 5/6 of their volume. The flor typical of the Sherry region is let to for in the headspace and the wine is aged under the yeast flor for 8 months. No MLF. Bottled in December 2015. 13% alcohol. Tasted blind.

    Medium-deep yellow color. Quite weird and pretty characterful nose with aromas of apple juice concentrate, dried yellow fruits, some mushroomy character, a little bit of wild funk and a most subtle touch of aldehydic tang. The wine feels quite light-bodied, somewhat developed and moderately high in acidity on the palate with flavors of nuttiness, some ether, a little bit of developed dried fruit character, a hint of saline minerality and a touch of green apples. Somehow the mouthfeel is quite oily, giving the wine some sense of fullness, yet overall it is surprisingly light on its feet, making the flavors come across even a bit thin. The finish is gentle, complex and dry with long flavors of nuttiness, sorrel, green apples, some aldehydic saline tang, a little bit of creaminess and a slightest hint of dried stone fruits.

    A very nice and characterful wine, but not me nor anyone else did guess what this wine was - in that sense, it was really a perfect blind-tasting wine. There was some obvious (yet still very subtle) aldehydic character to the wine in retrospect, but it wasn't that pronounced here so that one could actually automatically pick this wine out as a flor-aged wine. On the contrary, the nuttiness and very subtle salinity made people think that this wine was much older than it actually was and it being only vintage 2014 came as quite a surprise - until it was made clear how the wine was made. All in all, a fun and tasty experience; shows good versatility in regards to food pairings.
