  • Raiding the Cellar (Castagna): The bottle was opened an hour before tasting and tasted over the course of 3 hours.

My notes: "at first fresh grass and the granite and texture of a grüner then after an hour, salty saline and petrol. 2 hours later, wet granite, sweet bruised apple, celery seed, green freshly cut jalapeño. At hour 3, cotton candy and baked sugar cookies, showing rich and full like a ripe grower champagne. Finally passion fruit and candle wax with the persistent jalapeño again.

(Didier Dagueneau Blanc Fumé de Pouilly Clos du Calvaire) Light canary yellow color; very minerally and herbal, spicy, grapefruit zest nose; tart grapefruit, focused, with high acidity, but lacking mid-palate fullness; medium finish
