Looking for an expression of mature Chablis, I instead hit a vibrantly-fruited beauty; at least at first… Initially the nose of mostly sulphur. Trace Dolly Mixtures. Complacently into the mouth then, and, wow: glistening, near-syrupy materiale flows over the palate for 1.5 seconds before being blasted by a wide-focus laser beam of acidity. Unsurprisingly it then finishes dry. Such vibrant lemon skin, with undertones of oily steel, bitter dried apples and ? egg shells? Within half an hour the fruit was far less alive, and I think the colour actually darkened – oxidisation in fast-forward mode. Fruit pleasure lost, it still pleased as a structural wine: taut, twisting (a physical, dynamic presence); and gallantly dry. From first impressions of 91++, it dipped and then rebuilt. Deserves the 91.

DAWGS July 2010 - 7th Anniversary! (Rex's Seafood Market, Dallas, Texas): Tasted non blind at a wine dinner. Yellow color in the glass, clear hue throughout. Nose of match stick, toast and hazelnut. Flavors of lemon zest, yellow apples and minerals. Medium acidity, light to medium body. Drink now.

Mature Chablis with a complex nose of almond, butterscotch and citrus.Yet elegant and completely dry with mineral that lingers on the palate. With mussels.
