  • 100% Presqui'le Vineyard. Fermented and aged 6 months in a single 100% New Ermitage Acacia barrel. Lees stirring 2x/week. bottled unfined and unfiltered.
    Personally I find this the most unique of the Cassiopeia horizontal.The nose shows unique and complex aromas almost hard to define. I decipher notes of plantain, rambutan, grilled pineapple, white flowers, saline and a woodsy funk.
    The palate replicates the nose with its uniqueness. Acidity is structured and juicy, mid-palate textures are creamy, much like a Nigori sake. Complex flavors unfold on the palate revealing plantain, rambutan, barbecued pineapple, bell pepper, white flowers, saline, and an herbaceous, lees-y woodsiness that pull through the long complex finish.
