  After 8 years, popped and poured. On the nose, getting notes of light oak, pears, green apples, and a hint of butterscotch. Delicate and sophisticated. On the palette, everything feels well integrated and completely balanced. Baked pears, apples, buttery flavours, some oakiness and slight tannins. Again all in balance with nothing dominating. Still some acidity left. Medium finish with green apples lingering at the end. Very pleasant. I’m used to the Napa Chardonnay and the vibrant oakiness and vanilla. This is the opposite as its all about subtlety. Will pair perfectly with chicken and soft cheeses. Enjoying this very much. And has many more years to go but drinking well right now.
