  • Still drinking well, a bit on the fruity side with mild structure. A soft mouth feel, round. Very smooth drinking.

  • Entered this as the Central Coast entry in a Cabernet Sauvignon blind tasting of Washington, NoCal (Sonoma) and Central Coast. This wine took second place but was a favorite of many. Too much tasting so I’m not putting in a rating.

  • After 2+ hours decanted: this Paso CS is too fruit dominated, making it out of balance. On the positive, it is smooth drinking, no off flavors, and went well with our roasted root vegetables buckwheat grain bowl. We do enjoy drinking it. With that said, it is just too singular with the big soft fruit to deserve a high score.

    Uncorked ≈65 min piror; Private Preserve after Day 1

    N: Ripely fragrant blk/boysenberries with notes of choc

    P: Med body; RNDISH entry with NICE, ALMOST swtish frt with HINTS of pyrazines met by an astringent pucker which fairly seamlessly, quite works itself out by the LONG, balanced finish with a discrete swtness to the unoffensively firming, slightly dusty tannins. Quite a substantial wine that, while in its window, poss even has yet to peak? Moreover, it went VERY well with the night's Beef Estofado (AR&IT)/Spinach Noodles which also included Pesto.
    // Day 2: ≈aromas to Day 1, but slightly < intense; On the P the frt/swness has fallen off > I'd have anticipated, being replaced by a bitter/swt choc aspect that I didn't sense on Day 1. Nonetheless...
    ∑: My EXC-, & I'd listen to EXC if consuming this with the proper entrée & in one sitting. Also, given Day 2's falloff, perhaps best to consume this by '22, although in all fairness, this bottle had < "ideal" storage. :( [As of late Aug '20, wine-searcher shows no available sources for this vintage].
