90: Absolutely must be decanted or strongly aerated! I can't say that I liked this straight out of the bottle. I remember being impressed at the winery in Valle Guadalupe, Mexico -- which is how we ended up with two bottles -- but my first sip was disappointing: packed with mouth-puckering tannins and a bitter finish. It was an entirely different experience 30 minutes after decanting: the tannins had mellowed considerably and the bitter finish was gone. Another 30 minutes and the wine has completely opened up, revealing a beautiful complexity of fruit leather and earth with an almost meaty finish. The remaining tannins cut through the savory flavors of the fatty beef entree. A beautiful color in the glass, a translucent ruby not really like either Cab Sauv or Malbec alone, with abundant medium legs on the swirl. More terroir on the nose than the palate. Did I mention decanting? And do it an hour before the main course is served for best effect.
