Not your typical Cava, there is lots of intrigue here. Hints of oxidised apples with some preserved lemon and saffron, the maturity is showing here, but it retains a freshness as well. Crisp and racy, the finish returns you to those uniquely scented fruits that started things off. Not necessarily a sparkler I'm attracted to, but very compelling and would go well with many foods.
