Bottled May 23, 2022. Fresher than my last bottles -- with this beer, freshness is paramount, especially having tasted it at the source last year. The cherry flavours here are brighter and more pronounced, but this is already quite intensely tart and starting to lose a bit of balance. Still, delicious enough with some food.

No formal note. Very sour with deep sour cherry and other savory notes. Very complex and cerebral - not a simple beer to enjoy but one to savor and ponder. It was clenched on day 1 but opened up and freshened up over the next few days.

Bottled May 14, 2020. Not a fan of this at this age -- it's lost most of the verve and freshness, and even though there are still distinct cherry notes, this doesn't have the aldehydic intensity I experienced when I tasted this at the brewery. Quite leesy at this point, further detracting from an otherwise pretty nice beer.

Bottled May 14, 2020. Not quite as potently cherry-inflected as a recent 3 Fonteinen Schaarbeekse, but still very much clean, bright cherry flavours here. Nicely balanced acidity without going over the top. Pretty nasty lees though...
Cantillon visit (Brussels, Belgium): Very bright, intense cherry flavour. Again very different from the bottles I've had in the US; this is much fresher and brighter, with more verve, electricity, and liveliness. There's also a distinct medicinal/almondy bitter note here that reminds me of the effect when you bake a sour cherry clafoutis but leave the pits in. Getting more convinced this should be drank as fresh as possible.
