  We bought a parcel of this on a tour of Tuscany. A sweet sparkling - when could you use it? Tonight, we had some King Mushrooms with a soy/lime juice/sesame oil dressing. It works! This is the complementary (as opposed to the congruent way - ie more Umami e.g carignan, petit syrah) way of pairing. You get this amazing teriyaki taste. There was a splash of chilli oil in the sauce as well which was also taken care of. What a revelation.
