  • Dinner at Uncle Lawrence's (Uncle Lawrence's Place): Very nice indeed. Every now and then, I get a reminder of just how great a Riesling vintage 2005 is, and this wine was a great example. I have not had this for some time, and it seems to be developing very nicely indeed. I liked the nose, with its sweet little scents of white peach and apples, white flowers, nectar, and very typical WS vanilla accents – all this drizzled with a few drops of petrol. The palate sill had a rather primary feel on it, but it was already so drinkable - a brilliantly bright, fresh, balanced package, with energetic flavours of ripe apples and more citrussy candied lemons emerging alongside a charming waft of white flowers and honey. With a bit of air, it started showing even more, with a clear backdrop of solid mineral surfacing towards the finish. Grippy, super-fresh, and nicely structured with that firm minerally backbone – this is starting to get seriously yummy, but it is still years and years away from peak.

  • Deep yellow. Deep notes of ripe jackfruit, mangoes and lychees rambutans. Deliciously aged with layered notes of clean minerality. Quite a thinkers wine.

  • Didn't take notes, but I served this with crab cakes last night. The crab cakes were very good, but the wine was great! Great pairing too. The wine had a great combination of power and balance. Viscous but light in the mouth, lots of lime, nectarines, pineapple, etc, and good minerality. Nice long finish. Tasty now, but will only get better (A-/A).

  • Dinner at Yingthai Palace (Purvis Street, Singapore): This was excellent on the night. Popper and poured, it was tight, as one would expect from such a young Auslese, but already showing more than we had hoped for. It had beautiful Mosel nose, expressive but not showy, with gentle wafts of nectarine, peach and red apples, just a touch of mineral and then some white flowers, very sweetly attractive without being showy. On to the palate, and this had really nice juicy acidity, with lovely flavours of apple flesh, peach and and pear, with a little touch of bittersweet fruit rind. This had pitch perfect balance, and I really liked the freshness and clarity on this wine. The finish ended with a nice bit of citrusy freshness that lifted the wine in a nice long tail, where there was just a hint of Chinese Long Jing tea. Still very young, but there was a nascent complexity just starting to rear its head. Lovely, and a great pairing with all but the very spiciest of our Thai curries. This would be a really nice bottle to revisit in 10 years' time.

  • Family Christmas Private Dining with Mrs Sam Leong (Lake Point): Clean slightly petrol nose intermingled with nice pineapples. This is really minerally clean and sparkling dry finish though there is a lovely balance of acidity and ripe lychees / pineapples on the palate. Excellent length with perrier like sparkling clean finish. Lots of slate minerality and cold stones. This is an excellent wine with impeccable sense of balance. Not the normally fatty rich auslese and some might call lean but I think this is superbly balanced.
