Premox so not rated. Did not make the cut for being in the clams sauce either. I had so many off bottles of 'natural wines'. Do you understand the hype about not using sulfur ? Personnally I don't. If there is not enough acidity, if hygiene in the cellar is not top notch, and if there is some residual sugar, inevitably something is going to happen in the bottle. I am going to be cautious about buying these and cellaring these in future. I emailed the shop in NYC who sold me the cider bottle and advised them to tell future customers. No reply yet. Drink it up, I guess.

From a 3 hectare estate in Beaune, Puligny and Saint-Romain. A parcel of 80 year old vines. Organic and biodynamic viticulture. Whole cluster fermentation. Bottled unfined and and unfiltered, without added sulfur. Wonderfully cool and minerally, ripe citrus, pure and precise, white peach, fresh and bright, elderflower, strong note of lowland Malt on the finish. At restaurant Déviant, Paris, France.

Goodbyes and birthdays (Chicago, IL): Tirage No. 1. This is actually pretty good, if it was Jura, but a little more oxidative and nutty than I would want for a Burgundy appellation. It has the sort of fresh oxidative style that I really love. Fairly large scaled on the palate as well.
