Full of baked apple and hints of oxidation, I didn't love it but its certainly a style. Bubbles were not as strong or fine as I would have liked and there was a certain bitterness in the finish. Not horrible but for $45, not great either.

Wow. Loved this. Pale peach color. Never seen anything like it. Small bead. Light, frothy mousse. Biscuit and a fresh, mineral finish. Great price for this quality. Distinctive.

Weird bottle label that calls this “Repect nO 16-15”. Unlike the previous year’s shipment that was just “Respect nO 1”. Huh. This has a slight rose tint with dirt earth, lemon and brioche notes. I thought this was from last year and I’ve only had it in my hands 2 weeks after shipment from G-riste. Should have waited. Seemed maybe a bit flat but still good.

Pours with a pretty rosy hue that almost suggests age but this is crisp and bright with just enough fruit to keep everything in balance. Charming and ready to drink (or hold of you can keep your hands off).
