  • Drank with dinner (seared albacore tuna with avocado paste). Turned out to be an awful pairing. Put the wine aside and revisited with a cheese course for desert consisting of a triple cream brie. Turned out to be a better pairing than the tuna and avocado but still not great. Revisited after the cheese and the wine was wonderful. Im not sure what food to pair with it. It appears tougher to pair than a still pinot noir or a sparkling pinot noir fermented without skins. I have 3 more bottles which I will enjoy without food moving forward as the wine is delicious on its own. Drink quickly as the bubbles do dissipate quickly.
