Same feeling than in my previous tasting note about this Champagne. Tried this time with a lobster : great association ! It's fruity, softly spicy (keep in mind the more than 70% Pinot noir in the blend + the addition of still Pinot Noir)

Cuvee Holiday Luncheon: Served with Smoked salmon brioche crostini with whipped avocado lemon zest and radish. This proved to be one of those ethereal pairings. 72PN/38Ch. Pinot paired with smoked salmon on the front with brioche and "topping" which had some formage blanc carrying through. Pale pink hue and tight bead with elegant fruity pinot-dominant nose is seductive.

Pale pink hue, discreet nose, nice small (and many) bubbles :it's fresh, well balanced (meaning that nothing dominates in particular). I would suggest it more for a cocktail than through a dinner even though it would match with shellfishes, grilled vegetables, roasted chicken and any kind of red/black fruit tart

SAC: Evening of wines with some duck (Decoy): It's not really fair to go backwards on wine once you've gotten to the old stuff. The younger wines never show quite as well or quite as interesting unfortunately. That was the case here. I've had this wine - it's lovely. It just came across as more quite and simple (even though Rose). Difficulty sometimes with designing a pairing.
