  • This is a house staple (stable?) sparkler that consistently gives you good value and enough versatility to go with just about anything. We had it with sushi on day 1, then as an apertif on day 2, and it works equally well in both settings. A touch higher dosage than I prefer (but my wife enjoyed) and would expect for something labeled "extra brut," nonetheless, the sweetness provides some body and balance to the lemon curd and mineral notes. A bit one-dimensional, but who can complain for $35?

  • Aromas of yeast, bread dough, citrus and mineral. Flavors of puff pastry, mineral, citrus and hint of ginger. Ends with a mineral driven finish of 15 seconds. Says extra brut but pretty dry to me. Interesting champagne on the mineral driven, yeasty side.

  • Opened right after shipment arrived. Golden color with a slight greenish hue fine bubbles. Smells very apple-y almost like cider. Smooth texture, a little bitter. Baked aromas and flavor on the palate. Lemon and perhaps yuzu on the finish. A little alcoholic but not distracting. Would be better chilled more than I had it most likely.

  • This is the Extra Brut version of Hebrart's Sélection, normally labeled as Brut. The back label says "Vieilles Vignes". A blend of Pinot Noir from Avenay Val d’Or and Mareuil-sur-Aÿ and Chardonnay from Bisseuil and Mareuil-sur-Aÿ, all +40 yo vineyards. Fermented and aged in stainless steel. The wine undergoes MLF. 12,5% alcohol. No idea about the base vintage, but the wine is aged for a minimum of 24 months (often +36 months) in bottles and is disgorged on 6th of May, 2020. Served from a magnum.

    Moderately deep yellow-green color. Quite ripe yet fresh and rather dry nose with aromas of yeasty autolysis and almonds, some nutty notes of almond, a little bit of mealy golden apple, light bready notes of French bread and a sweeter hint of peachy stone fruit. The wine is ripe yet dry, velvety smooth and juicy on the palate with a medium body and bright flavors of red apples, some yeasty notes, a little bit of chalky minerality, light zesty citrus fruit notes, a youthful hint of white fruit candies and a sweeter touch of ripe white peach. Balanced, high acidity with a soft and silky smooth mousse. The finish is juicy, fresh and smooth with dry flavors of crunchy red apples, some nutty notes of almond, a little bit of yeasty autolysis, light zesty notes of ripe citrus fruits and a sweeter hint of ripe white peach.

    A vibrant, wonderfully smooth and delicious Premier Cru Champagne that comes at times even surprisingly ripe and sweet-toned for an Extra Brut. Seeing how fruity the wine was, I find it hard to believe the wine would be this balanced as a Brut version as it was now really on point and not calling for any more sweetness in the fruit department. Although the wine did show some understated nutty and bready notes of autolysis, the overall emphasis was still very much on the fruity side of things. With its bright, zippy acidity, this was a perfect welcoming toast and a great foil to the lighter entrées. Lovely.
