60 min slow ox; Private Preserve used after Day 1.
N: Slightly closed; Blk cherries, vanilla, hints of dill, poss minerals; Floral aspects with addt'l air/swirling
P: Med body; Nice, almost swtish frt met by a bit of astringent pucker which SEAMLESSLY transitions into a LONG, BALANCED finish with a tangy/swtness to the almost negligible, very, VERY fine tannins, though a slight bitterness DOES creep in @ the very end. Could probably stand another 6-12 mos for that very end to resolve. 🤔 Tonight it seemed best with the Corn on the Cob rather than by itself or with the Stuffed (Grnd Beef) Peppers with Tom Sauce.
// Day 2: More attractive aromatically than Day 1, I'd say cherry cola with a floral component. P now showing > of a LM body with NICE frt quickly met by a tart acidity which SEAMLESSLY evolves into a LONG, eventually pleasant finish. Soooooo... a BETTER overall showing than on Day 1! 🙂
∑: Right now my VG+ (88,89/100 using that metric), though I *definitely* see the potential for higher with at least a yr of cellaring [or a HEALTHY decant currently], followed by drinking through '25 w/o difficulty. 15.0% ABV (bottle), but 14.8% per the Winery's Tech Notes.
