≈2 hr slow ox; Private Preserve used after Day 1.
N: Cherries atop vanilla with notes of dill, poss some spiciness
P: LM body; NICE, Almost swtish frt met by a tangy acidity which SEAMLESSLY evolves into a LONG, BALANCED finish with a DELIGHTFUL *tangy*/swtness (60:40) to the basically nonexistent tannins. FINE both solo & with our Mixed Mandarin/Szechuan! 🙂
// Day 2: ~aromas, with the spiciness showing a blk pepper component. P has held QUITE well, making it a SUPERB pairing for our Sliced Beef au Poivre & Baked Potato! 🙂
∑: Drinking VERY well currently, might actually improve a TAD into Spring '22, then hold into, probably through, '25. On the high side of my EXC (92,93/100 using that metric), so I feel good 'bout scoring a 93 for this food friendly wine! [Plus, though what I'd call a high acid style, its overall BALANCE won over even the sometimes acid aversive relatives!] 😉 14.8% ABV
