Coravin by the glass. Ripe black raspberry, spice, bramble and vanilla. Long soft, dry finish. Dense and full bodied. A very good QPR. Served with roast pork tenderloin and a mustard cream sauce.

2019 Château d'Aussières Blason d'Aussières Corbières
💭 / 📚 Corbières (Koh-bee-yeh) is an important appellation of the Languedoc-Roussillon region of Southern France.
Reds are the appellation's main produce; they are famously rich, herb-scented wines, made from Grenache, Syrah, Mourvèdre, Lledoner Pelut and Carignan.
Château d'Aussières (also known as Domaine d'Aussières) is a Languedoc wine estate owned by the Domaines Barons de Rothschild group.
Blason d'Aussières is the second wine and has a similar red wine blend, with 20 percent aged in oak barrels for up to 12 months.
👀 Medium ruby 👃Uncorked, double decanted, re-corked immediately and left in the chiller for 3 hours. Rich, complex and layered. On opening, I deciphered red fruits like raspberry, floral and honey on the nose supported by minerality, salinity, vanilla, and chocolate. 👅 Medium bodied and intensity. Well rounded acidity. Smooth tannins. Young but fresh, voluptuous and has a certain ingredients (that I can’t quite pin down) that hits the right spot. It’s truly a beautiful enigma!

Deep dark purple color. Strawberry, plum nose. Smoky, plum, black cherry flavors. Went very well with pork stuffed with dried fruit.
