Appearance: pale yellow straw with some gold. Nose: golden delicious apples, lemon zest, sharp yellow fruit. Pallette: sharp yellow fruit, toastiness, buttery notes, herbiness. Unripe yellow melon. Medium plus acid. Dinish: medium, hint of bitterness.
Paired with cheesy salmon en crute.
6.5 - 7 / 10

This light golden Chardonnay was consumed in a restaurant, where it was popped, poured and serially tasted over a 90-minute interval. Fully opening in glass within the first 20 minutes, it flaunts an aromatic profile of lime zest, white peaches, wet stones, lavender and cardamom. Medium-bodied, crisply acidic and without detectable alcohol (12.5%), it delivers flavors mirroring the aromas and stays solid on the mid-palate. Concluding with a lengthy, saline-laden finish, this is showing beautifully now and should continue to do so throughout the remainder of this decade. This particular bottle was personally "titrated" with an ice bucket to maintain an approximate temperature of 55°F, which was optimal for keeping the aromatics alive. Drink now-2030.
