After all the jaw-clenching acidity, it's time to tame it down a notch with some dolce. First up is this Lambrusco from Medici Ermete, an organic winery in Emilia-Romagna. Lambrusco can be made in a various diversity of styles, from dry to sweet, and here we chose the latter. The pairing with peanut butter & jelly sandwiches made the heavens open up. Open and refreshing on the nose offering big fruit-power of raspberry hard candy, strawberry, blood orange, ribena, cherry wine gum and mild savory elements. Super fruit on the palate as well, but the sweetness in countered by a nice touch of acidity, not too high. Soft tannins, long finish. Personally I wouldn't drink this again because it isn't my style of wine, but this is quite well-made in its category.

Gambero Rosso Tasting (Doltone House, Sydney): Medium minus intensity aromas of cherry. Medium plus intensity acidity is offset by some residual sugar, mousse is quite delicate, but this isn’t really in balance. Meh
