During a tasting dinner. A bit of a let down for such a heralded Cuvee. Somewhat typical for Billecart, quite sterile and un-aromatic. Acidic and a bit thin for such a top cuvee, lots of bitterness on the finish. Opened up a little after 1h but not much. May be that cold fermentation with industrial yeast is good for creating consistency in their base cuvee, but it does not do any good here in the high end space. Young, keep for another 5+ years before opening. 90-94?
