Labet and cheese, this was a magic combination. Baby Vin Jaune but still very fresh (and persistent!) on the palate. Quite approachable and expressive, good acidity, some lemony fruit, nuts, saltiness… yum. 92 points for now.

Surprisingly approachable now. Actually with 1h decant this is very nice. Nose and palate are very expressive, superbly balanced and nice acidity. No heaviness. Super enjoyable

Great acidity, would've blindly guessed more savagnin. More on the fruity and acidic side, the oxidative notes are less pronounced, but certainly present and makes for an amazing, complex wine.

Jura study (Chicago, IL): 95% chardonnay - 5% savagnin - blended vineyards aged from 40 at 65 years old - matured about 2 years in old 228 liters oak barrels including 1 year under an indigenous yeast voile - pH 3.11 - total acidity 5 g/L - SO2 < 20 mg/L. Very much classic Labet. Not much reduction here either, but a very saline- and acid-driven wine with intense savoury notes. Clean, bright, and refreshing.
