Hari Raya dinner at Wimborne. Drank in Gabriel Standart. Appearance is clear, very pale intensity, lemon colour. Frothy bubbles. Thin legs. Nose is clean, austere medium- intensity, with aromas of clean steliness, citrus lemon-lime, fennel and leafiness. Youthful. On the palate, dry, high acidity, medium- alcohol (12%), medium- body. Medium flavour itnensity, with flavours of citrus lemon-lime, green fruits green pear, fennel, green asparagus, steely stony minerality. Clean acidic medium finish. I feel like the profile doesn't justify the price tag. Arguably apparently it did improve with more air. Interesting herbal green elements. 100% Pinot Blanc.

Lunch with Richie (Yang Ming): No disgorged information, extra brut. 2nd time drinking this, interesting aromas of lemon, steely, linear and precise, rounded acid. Prefer this to the Bourdon which prob needs more time for the acid to soften.

Blind bubbles tasting (That Wine Place): Blinded. 100% Pinot Blanc, no disgorged information nor dosage on the back label, 12% alcohol. Lemon, savory, linear, dry at back of palate, white floral, asparagus. Very focus acidity probably due to 100% Pinot Blanc.
