Clairette (studio): In 373 days this has settled into a decisively classical pose—scented green with bitter pistachio, melon rind, and blanched gravel.

Very nice. Appropriately round in texture, but with a lightness and airiness, coupled with more prominent acid than is common in Northern Rhone whites. Must be the clairette.

Properly wax and tonic. Solar. Impulsive energy out of the gate. Fennel, dried ruby grapefruit peel, calcium, quince, rose. I'd like to drink this again in a few years. Resealed, tabletop, 24 hours later: surprising gains across the scorecard. Now more precisely integrated, seamless, savory with sunned stone. All the savagery is compressed into an appetizing, bitter retort on the finish. Saccharide morphed into voluptuous texture. I'm raising it from 90 to 91.
