  • An interesting wine, with the Caparone/Paso fruitiness mellowed by time in the cellar. Characteristic cabernet aspects balancing with the Paso fruitiness define the Caparone wines. I'm familiar with the current cabernets coming from the Caparone Winery, and this one adds the mellowness of age to those aspects. The cigar box woodiness combines with tobacco smoke on the nose, yet without the heaviness of cigars or the staleness of cigarettes. The richness of age makes for a tartness that balanced nicely with a charbroiled steak and a toasty homemade bread to absorb the juices.
