This is made from botrytized grapes fermented completely dry, I was told. Indeed, it starts out very honeyed and resinous, unfortunately at the expense of freshness. After a few hours to breathe, though, the fruit turns several complexions lighter, and crisper, enough to highlight its briny oyster-shell minerality.
