Nose of stomped lemon, swiss cheese and sticky dough. Little visible carbonation, with a very persistent but very fine bead. The palate shows mild, frothy carbonation and strong acidity, with loose-knit flavours of old-fashioned lemonade, green apple, grapefruit and Boston bun. Seems to have loosened up, but not yet fallen apart.

Friday Night Bubbles. Pale yellow in colour with nice beading. Yeast, toast and cloves off the nose. Almost creamy on tasting, nuts, toast, apples, rose water, crisp and dry. Nice fruit back bone, long finish, a well balanced wine. I like this wine, great price point below the entry level french mass produced products and about the same as a Vintage Domain Chandon.

One of the better Aussie sparklings I've had recently. Apple crumble and cream, dough, hint of honeyed toast. More of the same on the palate with great weight and authority.
