Enjoyed this with torchon & white fig/almond confit and it was delicious. We pulled it from the cellar at 55 degrees and allowed it to warm up sipping on it. It really opens up the flavors the warmer it gets. I know some may not like desert wines not chilled but it really changes the flavors. The luscious light syrup consistency and citrus and floral notes on the nose are lovely. Deep yellow gold color. Initial sip is sweet, then it turns to tart citrus (meyer lemon) and tingles the palate. The finish is back to sweet profile of pear and apricot with floral notes of honeysuckle, acacia, touch of jasmine.
***we had only drank half the bottle, corked it, and just finished the other half tonight 2/12/2023 - how this got better is beyond me but every one of the flavors metioned about just seemed more intense/flavorful/beautiful! we drank with a couple pieces of seared & salted foie gras for a desert. AMAZING.

3.75/5 Had to taste test with Kurt’s Panettone. Delicious flavor, body was a bit too “thick”/cloying. Needed more acidity to be more in balance. For this price, excellent, enjoy a good Sauterne more. First time for an Inniskillin. Looking forward to trying the 2004 to compare to this one.
