  • I opened this bottle for Valentine's day. First be aware this wine is a whopping 15% abv. The nose is strong and obviously a cabernet sauvignon. The color is deep garnet and as dark as I think a cabernet should be. Its almost like there is some syrah in there too to deepen the color, but I don't think they grow any syrah. The wine is bone dry with medium plus body. Lots of dark fruit on the palate. The tannins indicate this wine is still very young and may reach its peak in two or three years. Unfortunately, this is my last bottle! The finish is strong and long lasting, at least five minutes if you don't eat anything. I plan to drink this wine in two to three hours. By then, the tannins will have rounded out and it should go well with the prime rib we having. Cheers.

  • Cabs at Cooking School (Maybach, Ghost Horse +++) (Loretta Paganini School fo Cooking): I was anxious to try this. Bought on release and stored in my cellar. This is IMO the best winery in Ohio (Ohio River Valley) and 07 was one of the best vintages ever around these parts. It is developing quite nicely. Ruby/purple in color. The nose is dusty with cassis and black raspberries. Medium body. Medium tannins. Very nicely balanced with enough acidity and fruit. There is some complexity although I had greedily hoped for more. This was about $18 on release IIRC. The lightest bodies Cab on the table, but I found it very enjoyable, food friendly, and in a good place. I don't think it gets better than this but I have a bottle left so let's see.

  • Dark and deep red color. Nose of red cherries and oak. Intense, very ripe flavors of cherries, some cassis, and spice. Fresh oak tannin, good acid. Nice effort on this wine but not quite ready to go.

  • Not a typical Cabernet, more like a Zinfandel--fruit, not too much; nice body; high alcohol.

  • Overwhelming sweetness and viciously candy. Lashing of the treatment give vanilla/rock candy. Some volatile elements too. Certainly gobs of fruit and structure there as well. Neither of us able to drink a glass, but this may go somewhere.
