Fully mature now, revealing a nose of citronella and running cheese. Creamy texture with lovely marks of citrus, spices and salt flavors. Round and soft, genuine. Enjoyed over two days with no change. One bottle left now.

Very young showing, took hours to unfold and reveal that flavor of citronella I sometimes find in Jean Dauvissat's wines. Otherwise, a wine in the traditional mold showing off flavors of apple cider, cream and citrus. As Jim said, this is 'unique'. Decent pairing with grilled lobsters basted in butter and chive, also worked well with the cheeses later on. Will show more in say 4 years. PS: bought for $15/btl. A steal.

Probably my 12th bottle. They've ranged from completely oxidized to almost fresh, but this was right in the sweet spot: deep yellow color, mature, rich caramel notes, but not too far in the evolution. Got a few more bottles, I'm drinking up since there have been a few landmines (to return oxidized bottles before retailer fails), but this may have more life.

Fully mature Chablis. Complex, spicy, creamy, citrus, salty. Full wine with intensity and impact, old-school Chablis. A pleasure to drink.
