  • Has blackberry and mulberry briary fruits. There's coal smoke, pie crust and loads of spice too. It is rich and hearty with delicious flavours. It is powerful, but fresh and there's such great complexity to the long finish.

  • Tasting Training for WSET Level 4, Units D4 + D5 - Session 5 (blind): Wine 7: The wine has a deep ruby colour. The nose has medium intensity and shows primary characteristics of black fruit (blackberry, dark cherry) and red fruit (raspberry) as well as dark chocolate, coconut, clove and vanilla.

    On the palate the wine is (just) dry, with medium acidity, medium(+) tannin, medium body, and medium(+) length. The flavor intensity is medium(+), flavors include black fruit (blackberry, dark cherry), black pepper, as well as secondary characteristics from oak ageing like chocolate, coffee, vanilla, clove and charred wood. The finish has medium(+) length. The tannin is ripe and soft and well-integrated, and balanced by the dosage. The mousse is comprised of medium-fine bubbles.

    This is a very good quality wine since it has very good complexity, good balance of fruit and acidity, and medium(+) length. To be considered being of outstanding quality the wine would need even finer mousse and even greater length.

    The wine is ready to drink. The different components are in balance and while there is a chance that the tannin would soften further with more time in bottle, at the same time the defining fruit character would start to fade. The wine is hence not suitable for further ageing in bottle.

    NB: Easily identified as sparkling Shiraz. Best enjoyed with a steak. Smoother, less tannic and more harmonious from day two.

  • Project supper with Cass (Cass and Adrians place, Huntley Hill): Savoury, course bubbles, black berries and peppers...bit clumsy and tired for me, though.
