Clear golden color. The nose has a very strong anise component, nearly exclusive to any other aromatic components. Medium bodied with medium intensity. This is mostly about texture, acidic structure and mineral components rather than fruit. It takes crisp and clean to a high degree and is a lovely wine to pair up with a simple salad of arugula, pear and havarti dressed with olive oil and black pepper. The pepper draws out a lovely saline/rocky component on the finish. As it lingers, you really get the complexion of some tart key lime which has lingered behind the scenes, but you didn't realize was there until you finished your sip.
The second day finds the tartness/brightness out in front of all of the charming nuances I found on the first day. Kinda reverse logic, but it is what it is. Certainly a pleasant drink, but I think I prefer the Drouhin entry level bottles for basic white Burgundy.
