Dinner at Hermosa (Chicago, IL): Lambic Bio Saison 2016-2017, bottled June 2, 2020. Way better than my previous bottle. This had a little more fizz than that bottle, but the flavours here were cleaner and I liked the spicy profile of the hops on the nose. Moderate, balanced acidity. Plenty of funk nonetheless.

Lambic Bio Saison 2016-2017, bottled June 2, 2020. No fizz; at this point I'm pretty sure this is a still beer. Some hoppy herbals, with a relatively clean taste though there's a slight butyric note on the finish that I'm not keen on. Interesting to drink, but definitely not my preferred style of beer for its lack of carbonation.

3 year old barrel aged lambic, bubbles almost gone, acid and flat with good sour character and slight bitterness in the finish. Much prefer the Geuze. At the brewery
