  • On opening, this showed lemon and subtle yeastiness. A fine mousse, and with time the aromas become cheesy. The palate reflects the nose, but with air, we move away from tight lemon and toward bruised apple. There is a slight bitterness on the finish, reminiscent of grapefruit, giving a wonderful moreishness. Pretty good.
