  • (MidWinter Brunner:Truffles+Wagyu+TextBookWines) Old, fusty, oily, malty soy sauce, on the nose, with honey and beeswax. Congruently oily with citrus and pear notes, lightly sweet with marmalade. Again, soy and malt. Caramel finish, with ink, quince, malt and peat at the end. Great structure, complex and yet still amazingly balanced. Quite an amazing example of well-aged Hunter chard. Pity they're not really made to last nowadays.
