The French Huguenot Church. In 1687, my great great……great granddaddy was the first pastor.

Well, I had planned for VII to be the final Offlineorama, but then the owners and chef at Circa prevailed upon me to continue Circa night because they like the event so much.
Here are my initial thoughts.

Finding restaurants who are willing to let us have a private room has become nearly impossible (unless we spend giant bucks per person). This is why I’m posting now—I needed to get Circa booked. The Charleston dining scene is crazy; reservations at top restaurants sell out up to a month in advance. “Hot” restaurants neither need us, nor really want us. There is much more money to be made hosting corporate events and destination weddings. I do have a few ideas.

Burgundy Thursday
The Wine Room at Red Drum Gastropub, Mount Pleasant
https://reddrumrestaurant.com/
It may sound odd to choose a "Southwest" restaurant for Burgundy Thursday, but Chef Ben uses a lot of French technique, and he is a Burg guy, along with GM/Bev Director, Charlie. HRH and I ate there last winter with a couple of CTers and were blown away.

Burgundy Grand Cru (or the very best 1er vineyards/producers from TOP YEARS). As always, no 2004 or 2011 red, and no Camus.
Also no Corton (unless it's DRC)
I can narrow the terroir choices if attendees prefer.

1995 Krug Champagne Vintage Brut [magnum] (Hollowine)
1976 Bouchard Père et Fils Beaune 1er Cru Grèves Vigne de L'Enfant Jesus x2 (S1)
2005 Alain Hudelot-Noëllat Clos Vougeot x 2 (Mchang)
1976 Domaine Leroy Auxey-Duresses Rouge x 2 (Daviladc)
2000 Hudelot-Noellat Clos Vougeot x 2 (cme18)
2019 Dominique Lafon Puligny-Montrachet 1er Champs-Gain x 2 (cme18)
2014 Coche-Dury Puligny-Montrachet Les Enseignères x 2 (I631756)
1993 Jacques-Frédéric Mugnier Musigny x 2 (I631756)
2015 Pierre-Yves Colin-Morey Corton-Charlemagne x 2 (Mason_H)
1997 Domaine G. Roumier / Christophe Roumier Bonnes Mares (MC2 Wines)
2007 Domaine Roulot Meursault 1er Cru Les Perrières x 2 (mclancy10006)

Friday, Italia—Barolo/Barbaresco/Brunello.
Bonus bottles can be Champagne or maybe top Franciacorta, Recioto, top Vin Santo, etc.
I am cooking; the money we will save if I cook will be 100% spent on white truffles.
I have a decent rough draft of a smart-a$$ menu.
1990 Moët & Chandon Champagne Cuvée Dom Pérignon x 2 (I631756)
2006 Fattoria Poggio di Sotto Brunello di Montalcino Riserva [magnum] (S1)
1990 Tenuta Greppo (Biondi-Santi) Brunello di Montalcino Riserva x 2 (I631756)
1999 Giovanni Sordo Gabutti Riserva x 2 (Daviladc)
2007 Bruno Giacosa Barolo Riserva Le Rocche Del Falletto x 2 (mclancy10006)
2015 Giuseppe E Figlio Mascarello Barolo Monprivato x 2 (Mchang)
1988 Gaja Barbaresco Sorì San Lorenzo [magnum] (Hollowine)
1998 Rinaldi Brunate x2 (cme18)
2000 Bruno Giacosa Barbaresco Riserva Asili x 2 (I631756)
2011 Giuseppe Rinaldi Barolo Tre Tine [magnum] (Mason_H)
1997 Bruno Giacosa Barolo Falletto di Serralunga d'Alba (MC2 Wines)

Saturday, Circa, always Circa
HRH and I might even save our cereal box tops and spring to stay downtown. Since Chef Marc always does a five course menu, I will propose the following themes (up for discussion, of course).

All wines fully mature

1. Tête de Cuvée Champagne
1985 Louis Roederer Champagne Cristal Brut x 2 (I631756)

2. A white wine course, which we need.
2002 Nikolaihof Riesling Vinothek x 2 (Hollowine)
1997 Nikolaihof Riesling Fass Severin Vinothek x2 (S1)

3. How about right bank Bordeaux (we’ve never done that), or maybe right vs. left.
1998 Vieux Château Certan x 2 (Mchang)
1998 Château Haut-Brion x 2 (cme18)
1998 Château La Mission Haut Brion x 2 (cme18)

4. Northern Rhône (Chave, LaLa, etc.) or we can do old Grange, etc.
I’m not sure that Rhône vs Grange works, but we can debate.
Northern Rhône vs Rayas would also be pretty crazy.
2007 M. Chapoutier Ermitage l'Ermite x 2 (Daviladc)
1996 Château Rayas Châteauneuf-du-Pape Reserve x 2 (I631756)
2003 Domaine Jean-Louis Chave Hermitage x 2 (mclancy10006)
1996 E. Guigal Côte-Rôtie La Landonne x 2 (MC2 Wines)

5. Yquem, top TBA, etc.
1970 Château d'Yquem x 1 (MC2 Wines)
1983 Château d'Yquem x 1 (I631756)
1989 Château d'Yquem x 1 (Mason_H)

Digestif—Maybe an old vintage Port or three

Sunday, Old-School CA and Burgers
Menu is evolving
Flannery Beef Kali Burgers with S1's Amazing Pimento Cheese
I'm thinking long and hard about side dishes; one might be catered (especially if they'll also do an app)
I'll do a dessert

1969 Beaulieu Vineyard Cabernet Sauvignon Georges de Latour Private Reserve x 2 (S1)
1995 Seavey Vineyard Cabernet Sauvignon x 2 (Daviladc)
1995 Dunn Vineyards Howell Mountain (Hollowine)
2018 Benevolent Neglect Cabernet Sauvignon Meadowbrook Farm Vineyard x 2 (cme18)
1985 Ridge Cabernet Sauvignon Monte Bello x 1 (Mason_H)
or
1999 Mayacamas Vineyards Cabernet Sauvignon x 2 (Mason_H)

All declared wines must fit the quality and categories that are established. Early declarers set the themes; late declarers will have to source (I will declare early, but will still have to source). Remember, if we have more than 12 participants (we will), all declared bottles have to be 2x or mag. Also, we might need to cap the number of attendees. >24 simply makes no sense.
Since I will be retired I can set up golf one day at Snee Farm; Mason can set up golf at Wild Dunes.
Commit/discuss/yell at cloud, yada yada yada…

I guess someone saw the photo of the 1.88L 1971 Mascarello Barolo I said I bought for a future event...

In + 1

p.s. - I may have a truffle source for you and will happily pitch in extra if we do a Truffle night.
p.p.s. - Grange is a Princess that doesn't share a throne. Each Rhone to their own.

We're in as well. Hopefully we get to be in town for all of it.

I also have a truffle source through the importer we went to Italy with this past October. I'll ask him for a sample price list today.

We are definitely in. I will rummage through the offsite today and see if I can find anything interesting. As I have always said the food cost is a rounding error for this trip when you consider the costs of wine and travel. Make it rain with truffles.

I’m lookin at Cru Cafe for BT; the private room is not large.
Right now we are 14.
If anyone else wants in, speak fast, or the BT dinner will be sold out.

If Cru Cafe comes through, we have two seats remaining for Burgundy Thursday.
I’m not specifying villages/vineyards, but go large, with age.
16-18 guests means 2x per wine.

DM’ed you on wineberserkers this morning, I live in Charleston and would love to attend.

Here are some early thoughts on what I could bring to match the themes:

Burgundy
2000 Hudelot-Noellat Clos Vougeot x2
2015 Trapet Chambertin x2
2013 Drouhin Beze (Mag)

Bordeaux
1981 VCC x2
1998 HB x2 / LMHB x2 could be fun to pair against the 98 VCC

Champagne
2013 Bouchard Vv x2 or
2018 Bouchard Ursules x2

Rhône
Most Jamet vintages of the last decade x2

Piedmont
1998 Rinaldi Brunate x2

Cali TBD

Mostly too young GC burgs in the cellar so I suppose the only fix is to get more old ones...

If all attendees remain committed, the event is at capacity.
Any new zombies will have to wait for the exit of other zombies.

I'll work on updating declared wines.

OP updated with Burgundy Thursday info.
The wine room holds 20.
$800 F&B minuimum and $100 for the room.

No brainer IMO

I imagine Chef Ben will go all pairing crazy with a special menu, especially when he sees the stuff WE bring to the table.
Ben and GM/Bev Director, Charlie, are old friends--we probably ate there the week they opened.
btw, if any of you know TALL Chef Tim at Disney World (he used to be Flying Fish, but is now running a restaurant group), Tim helped Ben open RedDrum--they go way back.

Chime in "YAY" or "NEIGH" quickly so I can book the room.

I would love to be able to participate and meet some fellow CTers, but I don't have anything which fits any of the current themes as I don't have any Burgundy or Italian Barolos/Barbaresco/Brunello.

However, if there is any way for me to join, I am able to bring the following:

2009 Chateau Batailley x2 (Bordeaux)
2009 Paul Jaboulet Aîné Hermitage La Chapelle x2 (Rhone)
2014 Louis Roederer Champagne Cristal Brut x2 (Champagne)
2010 Podere Il Carnasciale Il Caberlot x1 Mag (Tuscany, Toscano IGT)
2010 Castello dei Rampolla d'Alceo x2 (Tuscany, Toscano IGT)

and a plethora of choices from CA vintages 2009-2017.
