Flight 1 - Burgs and bubbles... (4 notes)

This is was really nice. Citrus, herbs, hazelnuts with a beautiful frame of oak on the nose with a rich yet lively mouthfeel. Excellent acidity and a mineral-laden finish. Extremely enjoyable now but there's no rush. Outstanding.
White - Sparkling

Medium straw colour. Quite developed on the nose with baked yellow fruits, mushrooms and some nutty/yeasty aromas as well. Rich in the mouth with excellent length and solid acidity. Not the best bottle of this Ive had but still very enjoyable. Excellent.

This was quite a bit better than the '90 it was served with. Candied ginger, coffee and baked apples on the nose with loads of complexity. Rich mouthfeel but still has solid acid. Excellent length and persistence. This is ready for prime time drinking. Outstanding.

Tasted blind. Very pretty nose with black fruits, purple flowers, dust and hints of spice. Lots of structure on the palate that almost overpowers the intense black fruit. Pleasant acidity but this is a bit of a bruiser and seems to lack elegance at this stage. Needs 3-5 years. Excellent. 90+

Flight 2 - A few vintages of Palmer... (6 notes)

Surprisingly, none of these wines really wowed me (besides the '83 to some extent). They were all good, but nothing to get really excited about. There wasn't much of a house style to be found here besides the 1999 and 2000, which seemed to be cut from the cloth. The '83 was one of the only wines that could easily be associated with Margaux if tasted blind.

Nose of cassis, rust, cedar and some funk with a lighter body but loads of tannin. Even though there’s still plenty of fruit, the structure gives the impression of overpowering it. Seemingly young and tannic for its age. Beautiful nose just a bit unbalanced on the palate. Drink now. Very good.

Wow...what a beautiful nose. Classic Bordeaux fruit with a nice perfume and cedar. Soft and smooth on the palate with a rich and lengthy finish. Solid acidity balanced out the soft and smooth texture and gives a nice lifting sensation. This is drinking really well right now. Outstanding.

Strong notes of bell pepper and mint on the nose that somewhat overshadowed the blackcurrant and plum fruit underneath. A bit lighter on the palate with a strong cabernet profile. Very good.

Classic Bordeaux nose with blacker fruits and hints of bell pepper. Lighter but velvety on the palate with softer structure. This the second time Ive had this wine and I've really liked it both times. Approachable and very nice to drink now but there's probably more to come with a few more years. Excellent. 91+

Ripest nose yet with almost a right-bank profile. Masculine on the palate with quite a bit of ripe tannins and balancing acidity. Lots of rich fruit here but there is plenty of structure to keep everything in-check. This and the '99 showed quite a bit of family resemblance. Young, rich and full, this 2000 Palmer needs a decade or more to reveal its true potential. Excellent. 91+

Flight 3 - With cheese... (2 notes)

This was very mature and 'okay' at best. The label was better than the wine.

1996 Château d'Yquem France, Bordeaux, Sauternais, Sauternes

Loads of saffron on the nose with hints of vinyl and botryis notes. Rich and weighty profile with lush tropical fruit flavours and a long wooly/vinyl finish. For such a young Yquem, this was showing quite well, although I do prefer less weighty/higher acid dessert wines (Climens comes to mind). Excellent. 90+
